  • March 12, 2025 - Students from our Italian Food & Culture course and Dr. Alessandra Mirra had an incredible experience at Damo Pasta Lab in Philadelphia, where they explored the history and business of Italian pasta-making. Plus, they were treated to a hands-on lesson on the difference between durum wheat and soft wheat! While enjoying two handmade dishes—tonnarelli cacio e pepe and gnocchi alla sorrentina—students engaged in a lively discussion not only about food history and culture but also about the business opportunities tied to Italian cuisine in our region. A huge grazie to Damo Pasta Lab for an unforgettable lesson—and some of the best pasta in town!
